Method

  1. 1

First make the sugar syrup by dissolving the water and sugar in a small pan over a low heat. Leave to cool.

  2. 2

Peel the cucumber and cut it into cubes.

  3. 3

Squeeze the juice from the limes.

  4. 4

Put the cucumber, 300 ml sugar syrup, lime juice and ginger juice in a blender and blend until fine.

  5. 5

Sieve the blended mixture and catch the liquid in a bowl. Press some more of the cucumber through the sieve if needed.

  6. 6

You need about 500 ml of liquid in total for 6 ice lollies. Add a little more sugar syrup or lime juice if you don't have enough. Taste and add more ginger juice to taste if you like.

  7. 7

Divide the liquid between the ice lolly moulds, insert a stick and put them in the freezer for at least 6 hours, but preferably overnight.

  8. 8

The next day you can enjoy deliciously refreshing ice lollies with ginger!
