Mandarin Cake with Ginger Juice
Michelle from Organic Happiness made a delicious cake with our Ginger Juice!
“Only organic ginger and turmeric are used, and that's exactly what appeals to me so much about these products.”
Mandarin cake with ginger: this zesty cake with a kick doesn't just taste really good, it's also very healthy, gluten-free and lactose-free.
A while ago now, I went to the Biobeurs organic fair in Zwolle. The first stand I came across was Now Organic's. I didn't know them and was immediately interested in their story.
Go Now is a brand of Now Organic, a Dutch company that specialises in organic ginger. By the way, they import that ginger from China, where the owner of Now Organic emigrated to years ago. They've since expanded Now Organic considerably and sell not only ginger shots, but also health drinks and ginger beer. They have ready to mix drinks and ready to drink drinks. The ready to mix drinks are pure ginger and turmeric juice and far too strong to drink neat. So they're ideal for mixing into a smoothie, a cup of tea or a cake, like I did. The ready to drink drinks are a mixed drink of ginger and/or turmeric and mandarin, and you can drink those straight away.
Only organic ginger and turmeric are used, and that's exactly what appeals to me so much about these products. For more information, visit the Now Organic website: noworganic.euPreparation time: 10 minutes
Special equipment
- Citrus press
- Mixing bowl
- Baking paper
- Cake tin

Method
-
1
Preheat the oven to 180 degrees.
-
2
Cut the mandarins in half and squeeze them with a citrus press. You need 100 millilitres of juice for the cake, so check how many mandarins you need. I used 3 myself, but not every mandarin contains the same amount of juice.
-
3
Put the mandarin juice in the mixing bowl (or in the bowl of your food processor/mixer if you want to use one). Slowly melt the coconut oil in a small pan over a low heat. Meanwhile, add the eggs, the flour, the bicarbonate of soda and the ginger juice to the same bowl. If you want to use more ginger juice because you like more of a kick, that's fine too, of course. Once the coconut oil has melted, you can add it to the other ingredients in the bowl as well.
-
4
Mix all the ingredients together well with a spatula. Or let your mixer/food processor do the work. Make sure you end up with a smooth batter.
-
5
Line the cake tin with baking paper and spread the batter evenly over it. Bake the cake for about 45 minutes until golden brown and cooked through, but bear in mind that baking times can vary from oven to oven.

Let it cool for a while and enjoy this delicious fresh, zesty cake. The cake also freezes perfectly well.I love it when you make one of my recipes, and I'm always really curious to see the end result. Will you let me know how it turned out?
